                         Helen Acton's "Coconut Pie"

1st Place

  4 eggs (beaten)

1/2 cup self-rising flour

1 1/3 cup of sugar

1/2 stick butter or margarine (melted)

2 cups of milk

1 tsp of vanilla

1 8-ounce can baked coconut

Preheat oven to 350 degrees

beat all ingredients together and pour into a greased 10 inch pie plate

Bake 45 minutes

Though the fillings seems unsettled, do not cook pie any longer, refrigrate it and it will settle without spoiling it's creamy consistency.

Changes that work:

Beat eggs about 5 minutes before putting in the rest of the ingredients.  I use 2% milk.  Use Margarine instead of butter.  Cut Sugar by a 1/4 cup.  Put in extra coconut.....a little over 2 cups

Added 5 minutes to baking time.....may be my oven? HaHa.

It makes it's own crust!!!!!!!

Very easy.....enjoy
